Authentic Roquefort-strain blue mold culture. Makes gorgonzola, stilton, and roquefort-style wheels. Freeze-dried for maximum viability.

Equipment
Spring-loaded stainless press for hard cheeses. Adjustable from 5–50 lbs of pressure. Fits 1–2 lb wheels. Drain tray included.
Coagulants
Traditional calf rennet, single-strength. Clean coagulation for hard and semi-hard cheeses. 250ml makes approximately 50 batches.
